The Difference Between Chillies and Pepper

Chillies belong to the Capsicum family, while black pepper comes from a completely different plant species known as Piper nigrum.

Black pepper is a dried berry that has been used as a spice for thousands of years, long before chillies were introduced to Europe. It delivers a mild, sharp heat that is very different from the intense burn of chilli peppers.

Chillies, on the other hand, get their heat from capsaicin — a compound found in the fruit of Capsicum plants. This is what creates the burning sensation that chilli is known for.

When Columbus arrived in the Americas, he was actually searching for black pepper, which was highly valuable at the time. Instead, he encountered chillies, which had a spicy heat somewhat similar to pepper.

Believing he had found a version of pepper, he referred to them as “peppers” – and the name stuck.

Even though we now know they are completely different plants, the term “chilli peppers” is still widely used today, particularly in the United States.

In modern cooking and food production, the difference between pepper and chilli is important.

Black pepper is typically used for seasoning and subtle heat, while chillies are used to deliver a much wider range of flavours and heat levels — from mild and fruity through to extremely hot.
