Chicken

1. Spicy Chicken & Chipotle

Ingredients:

  • 500g chicken thighs, diced

  • 2 tbsp chilli paste

  • 1 tsp smoked paprika

  • 1 tsp cumin

  • 1 small onion, diced

  • Salt and pepper to taste

Method:

  1. Sauté onion until soft.

  2. Add chicken and spices, cook until golden and cooked through.

  3. Stir in chilli paste at the end for bold flavour.

  4. Serve in tortillas with fresh coriander and lime wedges.

2. Smoky Beef & Roasted Pepper

Ingredients:

  • 500g beef strips or mince

  • 2 roasted red capsicums, sliced

  • 1 tbsp chilli paste

  • 1 tsp smoked paprika

  • 1 small onion, sliced

  • Salt and pepper

Method:

  1. Cook beef with onion until browned.

  2. Add roasted capsicum, paprika, and chilli paste.

  3. Simmer 5 minutes to let flavours meld.

  4. Perfect with soft tortillas and avocado slices.

3. Prawn & Lime Chilli

Ingredients:

  • 300g prawns, peeled

  • 1–2 tsp chilli paste

  • 1 clove garlic, minced

  • 1 tsp olive oil

  • Juice of 1 lime

  • Salt and pepper

Method:

  1. Heat oil in a pan, sauté garlic 30 seconds.

  2. Add prawns and cook 2–3 minutes.

  3. Stir in chilli paste and lime juice.

  4. Serve in tortillas with fresh greens or slaw.

4. Vegetarian Bean & Corn

Ingredients:

  • 1 can black beans, drained

  • 1 cup corn kernels

  • 1 small onion, diced

  • 1 tsp cumin

  • 1–2 tsp chilli paste

  • 1 tsp olive oil

  • Salt and pepper

Method:

  1. Heat oil, sauté onion until soft.

  2. Add beans, corn, cumin, and chilli paste.

  3. Cook 5–7 minutes, stirring occasionally.

  4. Serve with tortillas, avocado, or cheese.

1. Guacamole

Ingredients (serves 2–3):

  • 2 ripe avocados

  • 1 small lime, juiced

  • 2 tbsp fresh coriander, chopped

  • 1 small garlic clove, minced (optional)

  • Salt to taste

  • Optional: small diced tomato or red onion for extra texture

Method:

  1. Cut avocados in half, remove the pit, and scoop into a bowl.

  2. Mash with a fork to your desired texture (smooth or chunky).

  3. Stir in lime juice, chopped coriander, and garlic if using.

  4. Add salt to taste.

  5. Serve immediately with tacos or tortilla chips.

Ingredients (serves 2–3):

  • 3 medium ripe tomatoes, chopped

Method:

Method:

Method:

  3. Add black beans, cumin, and chilli paste. Stir and cook 3–5 minutes.

  4. Add cooked rice and mix until heated through.

  5. Season with salt and pepper to taste.
