Why We Keep Our Chilli Paste Pure: Giving Food Manufacturers Control

Why We Don’t Cook Our Standard Chilli Paste

If you manufacture food, control over your ingredients matters.

Whether you are producing a hot sauce, condiment, marinade, ready-made meal or another food product, every ingredient that goes into your recipe influences the final result. Flavour, heat, colour, texture and consistency all matter – particularly when customers expect the product they buy today to taste the same as the one they purchased last time.

That is one of the main reasons we supply our chilli paste pure and uncooked.

At Exotic Chillies, our standard chilli paste isn’t cooked into a finished product or loaded with vinegar and other ingredients before it reaches you. We want our customers to have control over what happens next. If your formulation requires vinegar, salt, sugar, oil, spices or other ingredients, you should be able to decide what goes in and how much.

The same applies to the chilli itself. You might need the characteristics of a single chilli variety, or you may want us to develop a custom blend combining different varieties to achieve a particular heat profile, flavour or colour. You may want an extremely smooth paste, or a coarser mash with visible pieces and seeds.

Our job is to supply the chilli ingredient. Your job is to decide what you want to create with it.

And if your application does require a cooked or more extensively formulated chilli product, that’s something we can work with you to develop as well.

That’s the principle behind our approach to pure chilli paste: give the customer control.

Consistency Starts With Control of Your Ingredients

If you manufacture food, consistency is one of the most important parts of building a product people trust.

When a customer buys a bottle of sauce, a condiment or a prepared food product and enjoys it, they expect the next one to taste the same. If the flavour, heat, colour or texture changes noticeably from batch to batch, that can quickly turn a potentially loyal customer into a disappointed one.

That is why having control over your inputs matters.

Every ingredient contributes something to the finished product. If the chilli ingredient you are buying already contains vinegar, salt, sugar or other additions, those ingredients become part of your formulation whether you want them there or not. You then have to adjust the rest of your recipe around decisions that have already been made by someone else.

By starting with pure chilli paste, you have greater control over how your product is formulated. You decide what other ingredients are added, how much is used and how the finished product should taste, feel and perform.

This is particularly important for manufacturers trying to produce the same result across repeated batches. The more control you have over the ingredients going in, the easier it is to build a repeatable process and maintain the consistency your customers expect.

Think of It Like Buying a Loaf of Bread

There is a simple way to explain why we prefer to supply our chilli paste as a pure ingredient.

Imagine walking into a bakery to buy a loaf of bread, only to discover that every slice already has a spread on it. You want to make a chicken sandwich, but the bread already has strawberry jam spread across it.

There is nothing wrong with the bread and there is nothing wrong with jam. The problem is that somebody else has already decided what should go on your bread before you had the opportunity to decide what you wanted to make with it.

We look at chilli paste in much the same way.

There is nothing inherently wrong with adding vinegar, salt, sugar or other ingredients to chilli paste. For some products, those ingredients may be exactly what is required. But once they have been added, the chilli paste is no longer simply a pure chilli ingredient. A food manufacturer then has to incorporate those additional ingredients into their own formulation.

By supplying pure, uncooked chilli paste as our standard product, we leave those decisions with you. If you want vinegar, you decide how much. If you want salt, sugar, oil, spices or other ingredients, you choose them according to your own recipe and production requirements.

We supply the chilli. You decide what goes with it.

Pure Chilli Paste Doesn’t Mean One-Size-Fits-All

Keeping our chilli paste pure doesn’t mean every customer receives exactly the same product. Different chilli varieties bring different levels of heat, flavour, aroma and colour, and different food products require different characteristics.

Some customers may want a paste made from a single chilli variety so they know exactly what they are working with. Others may be looking for a particular heat profile or flavour that is better achieved by combining several varieties.

That is where custom blending becomes useful.

We can work with customers to formulate chilli blends designed around the characteristics they want in their finished product. One variety might provide the majority of the chilli flavour and colour, while another is used to increase the heat. A different combination may be chosen to introduce a particular flavour profile without pushing the heat beyond the intended market.

Colour can also be important. The chilli ingredient may influence the appearance of a sauce, condiment or prepared food, so the varieties selected need to suit more than just a target heat level.

The objective isn’t necessarily to create the hottest chilli paste possible. It is to supply a chilli ingredient that performs the way the customer needs it to perform in their product.

You choose the characteristics you need, and we can work with you to develop a chilli paste or custom blend that suits your formulation.

Smooth Paste or Coarse Mash? The Texture Is Your Choice

Texture is another area where different food manufacturers have different requirements. There is no single consistency that is right for every product.

Our chilli paste can be processed to a very smooth consistency, making it suitable for products where you want the chilli to integrate evenly throughout the formulation without noticeable pieces of skin or seeds.

But that isn’t always what a customer wants.

For some products, a coarser chilli mash can add visual appeal and texture. Visible pieces of chilli and seeds can help communicate that a product contains real chilli, particularly in sauces, relishes, marinades and other products where appearance is part of the experience.

Personally, I’m not a huge fan of biting into chilli seeds. They’re hard, they can get stuck in your teeth, and I’d rather have the heat and flavour incorporated throughout the product. That’s one of the reasons I like an exceptionally smooth chilli paste.

But what I prefer isn’t necessarily what your customer wants.

If visible seeds and pieces of chilli suit your product, we can produce a coarser mash. If you want a smooth paste or purée that disappears into your formulation, we can produce that instead.

The important part is that the texture is determined by the product you’re trying to create – not by what we think your product should be.

Where Did the Seeds Go?

When people see how smooth our chilli paste is, it can look as though the seeds and the inside of the chilli have been removed during processing.

They haven’t.

We use the chilli itself, removing the stalk before processing. The seeds and placenta are processed into the paste rather than being strained out or discarded.

This is important because the placenta – the internal tissue that the seeds are attached to – contains a high concentration of capsaicinoids, the compounds responsible for the heat in chillies. Removing it would significantly change the characteristics of the chilli ingredient.

Instead, our processing method reduces the chilli to a smooth consistency while retaining those parts of the fruit. You get the heat and characteristics of the chilli without necessarily seeing large pieces of seed throughout the paste.

For food manufacturers, this means a smooth appearance doesn’t have to mean sacrificing the parts of the chilli that contribute to its heat and character.

And, as mentioned earlier, if visible seeds and chilli pieces are part of the appearance you’re trying to achieve, we can produce a coarser mash instead.

Smooth or coarse, the aim is the same: give you a chilli ingredient that suits the product you want to manufacture.

Chilli Is About More Than Just Heat

Chilli has developed a reputation for being all about heat. The hotter the chilli, the better the story – and sometimes it seems the goal is simply to create something capable of melting someone’s face off.

There is certainly a market for extremely hot food, but that is only one way chilli can be used.

Used properly, chilli can add another layer to a product. Different varieties can contribute their own flavour and aroma, while the heat can range from a gentle warmth in the background to something that becomes a major feature of the finished product.

For a food manufacturer, the question shouldn’t always be, “How hot can we make it?” A better question is, “What does the chilli need to contribute to this product?”

Sometimes you may want noticeable heat. Sometimes you may want the flavour of chilli with only moderate warmth. In other products, a small amount of a hotter variety may be used alongside a milder chilli to adjust the heat without completely changing the overall flavour or colour.

This is another advantage of working with different chilli varieties and custom blends. Instead of treating chilli heat as an on-or-off switch, we can work with you to achieve a more considered balance of heat, flavour, colour and aroma.

Chilli doesn’t always need to be a challenge or a prank. Used well, it becomes another ingredient a food manufacturer can use to build flavour.

What If You Need a Cooked or Formulated Chilli Paste?

Supplying pure, uncooked chilli paste as our standard product doesn’t mean that is the only way we can manufacture it.

Some food manufacturers may need something further developed before it reaches their production line. You may require additional ingredients, a particular acidity level, preservatives, a different processing method or a chilli product developed specifically around your manufacturing requirements.

That’s something we can work with you on.

The difference is that we don’t want to make those decisions for every customer before we know what they are trying to produce. There is little value in automatically adding vinegar, salt or other ingredients if they don’t belong in your formulation or if you need to control their quantities yourself.

If a more formulated chilli paste makes sense for your application, we can discuss what you need and work towards an appropriate solution. That may involve using a particular chilli variety, developing a custom blend, adjusting the texture or incorporating additional ingredients according to your specifications.

For other customers, particularly contract food manufacturers who already have established recipes and production processes, a pure chilli paste may be exactly what they need as a base ingredient.

Pure and uncooked is our starting point, not a limitation. What happens next depends on what you are trying to manufacture.

Bulk Chilli Paste for Contract Food Manufacturing

For contract food manufacturers, chilli paste is often not the finished product. It is one ingredient within a much larger formulation.

You might be manufacturing hot sauce for another brand, producing marinades or condiments at scale, developing ready-made meals, or creating a completely different product that requires chilli as part of the recipe.

In these situations, starting with a pure chilli ingredient gives you flexibility.

We can supply bulk chilli paste for commercial production, allowing contract manufacturers to incorporate it into their own recipes and processing systems. Rather than receiving a chilli paste that has already been turned into somebody else’s idea of a finished product, you receive an ingredient that can become part of yours.

Depending on your requirements, that could be a single-variety chilli paste, a custom blend designed around a particular heat or flavour profile, or a different texture to suit the way the ingredient will be used in production.

We can also work with customers on batch sizes, chilli varieties and other specifications so the ingredient is suitable for repeat commercial production.

This approach is useful not only for contract manufacturers, but also for sauce makers, foodservice suppliers, commercial kitchens and other businesses that need chilli in quantities beyond retail-sized products.

Our chilli paste is manufactured in Australia, and we work with customers in Australia as well as international markets.

Whether you are manufacturing your own product or producing food on behalf of another brand, our aim is to give you a reliable chilli ingredient that fits into your production process – rather than forcing your production process to fit around our ingredient.

Your Product. Your Specification.

There isn’t one perfect chilli paste for every food product, because every manufacturer is trying to create something different.

Your product might need the flavour and colour of a particular chilli variety. You might need a carefully controlled level of heat, an extremely smooth purée, a coarse mash with visible seeds, or a custom blend designed specifically around your formulation.

What we don’t want to do is make those decisions for you.

By keeping our standard chilli paste pure and uncooked, we give food manufacturers the freedom to decide what happens next. You control the vinegar, salt, sugar, spices, cooking process and other ingredients that ultimately turn that chilli into your finished product.

And if you need more than a pure paste, we can work with you on that too.

At Exotic Chillies, we manufacture bulk chilli paste for sauce makers, food manufacturers, contract manufacturers, foodservice businesses and other commercial customers. We can supply single-variety pastes or work with you to develop a custom chilli blend based on the heat, flavour, colour and texture your product requires.

We don’t decide what your chilli paste should become. We give you the chilli ingredient and let you decide.
