Exotic Chillies Custom Chilli Blend to Feature at TSBE’s The Chef’s Table at Jimbour House

Exotic Chillies is proud to be involved in this year’s The Chef’s Table event hosted by TSBE, taking place at the iconic Jimbour House in Queensland’s Western Downs region.

The event brings together regional producers, chefs, businesses and industry leaders to celebrate premium food, agriculture and regional innovation across Southern Queensland.

For the evening, Exotic Chillies has worked directly with chef Stephen Dennis to create a custom chilli paste blend designed specifically for the event.

A Custom Blend Built for Complex Flavour

Rather than focusing purely on extreme heat, the blend was developed to deliver a balanced and layered flavour profile suitable for premium food applications.

The custom blend includes:

  • Birdseye chillies
  • Red Habanero chillies
  • Orange Habanero chillies
  • Aji Amarillo chillies
  • Banana chillies
  • Cayenne chillies

Each variety was selected for a specific reason.

Birdseye chillies bring a sharp upfront heat, while the Habaneros contribute a rich fruity body and lingering warmth. Aji Amarillo adds floral and citrus-style notes, Banana chillies soften and round the profile, and Cayenne helps tie everything together with a smooth balanced heat.

The final result is a well-rounded chilli ingredient offering complex flavour, a smooth mouth feel and an addictive style of heat that complements food rather than overpowering it.

Exotic Chillies founder Darren Muller recently met personally with Stephen Dennis to deliver the custom blend and discuss how the chilli paste could be incorporated into dishes prepared for the evening.

The collaboration reflects the growing interest in premium Australian-made chilli ingredients that provide chefs and food businesses with consistency, flavour control and flexibility across a wide range of applications.
