Ingredients

  • 200g caster sugar

  • 60ml (¼ cup) water

  • 120ml (½ cup) thickened cream (room temperature)

  • 40g unsalted butter (cut into cubes)

  • ½ – 1 tsp Exotic Chillies Red Habanero Chilli Paste (adjust to heat preference)

  • Pinch of salt

  • Optional: ½ tsp vanilla extract for extra depth


Instructions

  1. Make the caramel base:Chilli caramel sauce

    • In a medium saucepan, combine sugar and water over medium heat.

    • Gently swirl (don’t stir!) until the sugar dissolves.

    • Increase to medium-high and let it simmer until it turns a deep amber colour. This takes about 5–7 minutes.

  2. Add butter & cream:

    • Carefully add the butter and whisk until melted (be cautious — it will bubble).

    • Slowly pour in the cream, whisking constantly. Continue cooking for another 1–2 minutes until smooth and slightly thickened.

  3. Spice it up:

    • Remove from heat and stir in the Exotic Chillies Red Habanero Chilli Paste, salt, and vanilla (if using).

    • Taste and adjust heat to your liking.

  4. Cool & Store:

    • Let cool slightly, then pour into a sterilised jar or container.

    • Store in the fridge for up to 2 weeks. Warm gently before serving.
