About Us – The Story Behind Exotic Chillies

At first glance, Darren, the founder of Exotic Chillies, might seem like an unlikely chilli paste producer. With a background as a qualified digital designer and years in the 9-to-5 corporate world, he had no experience in agriculture or food manufacturing. What he did have, however, was curiosity—and a passion that would grow into something far greater than he ever expected.

It all began over ten years ago with a simple packet of super-hot chilli seeds. Darren planted a few chilli plants in pots as a hobby—but it wasn’t long before those pots multiplied. As he nurtured more and more varieties, he discovered a vibrant community of chilli enthusiasts who shared his fiery passion.

What started as a backyard pastime quickly evolved into a full-blown obsession. Darren owned a block of unused land in Tara, Queensland, and saw the perfect opportunity to expand. Step by step, he built a working chilli farm. For the next five years, Darren and his family ran the farm, employing locals and cultivating a wide range of chilli varieties.

Unfortunately, after a series of break-ins and thefts, the farm became unsustainable. Forced to sell, Darren faced a crossroads. Rather than returning to the corporate world, he chose to reinvent Exotic Chillies—this time with a focus on chilli paste manufacturing.

Over the next two years, he built a purpose-designed processing facility at his home in Chinchilla. Drawing on hands-on experience, community support, and a dedication to quality, Darren created a space where pure, high-quality chilli paste could be produced at scale—without compromising the bold, natural flavours that first inspired him.

Today, Exotic Chillies proudly supplies pure chilli paste to restaurants, boutique sauce makers, and anyone looking to bring heat and depth to their culinary creations. Every batch tells the story of Darren’s journey—from curious hobbyist to full-fledged chilli artisan.

In the beginning - going from a few plants to lots of plants

The first chilli garden

One lonely 7 pot chilli plant, this was not the only chilli plant growing there was about 30 different varieties growing from mini piperka to the dreaded carolina reaper.

Our first harvest

This was a typical weekly harvest in the beginning, a nice mix of heat nuggets. None of these went to waste I even think the people living next door would sneeze from the fumes coming out of our kitchen.

Starting to get serious here, this hydroponic table was built in our shed capable of sprouting thousands of seedlings at once.  Most of these seedlings we sold at the local markets.

Inside our 30m long hothouse full of seedling, this lot was planted on our farm in Tara.  There is approximately 25 000 Aji Amarillo seedlings in here.

Turning our block into a farm was a mission

The birth of our chilli farm

Standing out the front of our farm in Tara before anything had been done.  No land was cleared, we didn’t even know if the ground was capable of growing a crop.

If you have ever had the pleasure of stick picking then this photo might be enough to give you a sore back.  Once the land was cleared all the tree roots and sticks had to be removed prior to ploughing.

The first lot of water in our dam, I do have a video on YouTube of this build which is interesting if you like that sort of thing.  When full it was capable of holding 3ML which is not big but chillies don’t like too much water so the dam was adequate.

Working the land

Sitting on our rough Leyland 145 tractor working the field and getting it ready for planting. The ground had to be treated with lime and feedlot manure to make the soil suitable for growing a crop.

Hand planting chillies

All our seedlings were hand planted using locals.  It took about 15 people to plant the 20 000 seedlings we started as the sun was high enough to to give us enough light to see and we were all done before midday.

Another field planted out with 120 000 various varieties of super hot chillies.  There was Scorpions, Reapers, Ghost, Butch-T plus a few other varieties. We had about 150 000 chilli plants growing over several fields.

Almost harvest time

This was our first productive crop of Aji Amarillo chillies, which yielded several tons of pods throughout the season.  The Aji Amarillo are heavy producers and we had to support the plants using timber stakes and lines.
